It's almost here.....that time of year which terrifies and frustrates many of us year after year with the same old dilema as years past. It's swimsuit season and though there are arguably more pressing health reasons to lose weight and get fit, for many of us, it is undeniable that not being at the physical place you want and have planned to be, year after year, is mentally tormenting.
Again, as in my last post, trying to remain consistent with your exercise efforts and focussing on feeding yourself in a manner which 'supports your fitness efforts,' is key to longterm success both in losing weight and in maintaining your weight-loss.
So.....this is just a reminder. We're 6 weeks away from the beginning of June, when the kids are out of school and they will be wanting to go to the local pool. Please plan to do the things now that will ensure you are comfortable joining them.
It's time now, to get started.

What we become, achieve, develop or accomplish, generally comes down to what I like to call, 'the Big C.' What is 'the Big C' you ask? It stands for 'CONSISTENCY.' Why is Consistency important? It's because what we do on a consistent basis results in an end result which is usually reflective of that which we were consistent with. An example is smoking. If someone smokes a pack of cigarettes a day for 20 years and ends up with lung cancer, is the cancer an unexpected occurrence? Of course it's not.
If an athlete practices the pole-vault each and everyday, are we surprised when they excell at the track meet? No, we're not.
Consequently, if you leave your diet to chance and have no idea what your eating for lunch each day, you may consistently overeat too many calories of all the wrong stuff. If you eat poorly consistently and only exercise 2 to 3 days per week, is it a surprise when you don't lose weight, or when you gain weight? It probably is not.
So today, I am going to encourage you to focus on 'the Big C.' Make consistency in your diet and your exercise an everyday occurrance. Consistency can be your best friend, so long as what your being consistent about, is helping you to achieve a healthy and worthwhile goal.
Get back to the basics and make sure you have a plan for exercise Each and EveryDay and a plan for how you are going to eat each day.

Serves four. Give it a try!
4 Generous Servings
Nutrition:
Cals 374; Protein 48g; Carbs 40g; Fat 4g
Ingredients
About 2 cups canned green or red enchilada sauce
10 6” corn tortillas, cut in half
16 chicken tenders or 4 boneless, skinless
Chicken breast halves (1.5lbs), cooked and shredded
1 cup low-fat shredded cheese
Directions
1. Preheat oven to 350F.
2. In a 9 x 13-inch pan, pour ½ cup enchilada sauce on the bottom.
Distribute the sauce evenly.
3. Layer pan with additional ingredients; tortilla halves, chicken, cheese, and repeat.
Top casserole with remaining cheese.
4. Bake until bubbles appear (about 30 minutes.)
Serving Suggestion
Add a fresh, green salad for a complete meal.
